Job Description:
My Client is currently recruiting for three Chefs de Partie to join their culinary brigade of passionate, hard-working chefs who strive to produce beautiful dishes. They are looking for someone who has a solid background using their love of food and fine dining, and is eager to go far in their career. This beautiful country hotel set in the heart of Gloucestershire specialises in producing great food using fresh, quality, and seasonal, British produce. The menu changes regularly and includes seasonal veg and all locally produced ingredients. The chosen applicant will have a passion for food & flavours and a desire to work to constantly improve and build on the strong foundations already in place. This is an excellent opportunity for candidates to show off their culinary skills amongst an already fantastic and strong team. Responsibilities: • Confidently run a section in the kitchen, maintaining food quality of high standards and discipline. • Support the Head Chef and Sous Chef in the daily running of the kitchen. • Preparing, cooking and presenting dishes to a high standard. • Helping the sous chef or head chef to develop new dishes and menus. • Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety. • Monitoring portion and waste control to maintain profit margins. Requirements: • Have experience of banqueting to a minimum of 100 covers. • Have excellent food preparation and presentation skills. • Understand the importance of portion control and dish specifications. • Have experience in hotel or large restaurant kitchens with recognised food awards. • Be either a senior Commis looking for first CDP position or an existing CDP. • Own Transport desirable due to rural location, however transport can be arranged for evening shifts.
